La présente Norme internationale spécifie une méthode de détermination de la teneur en nitrates du lait et des produits laitiers par spectrométrie d'absorption moléculaire après une réaction de Griess (précédée d'une réduction enzymatique).Cette méthode s'applique notamment au lait entier, demi-écrémé, écrémé et au lait en poudre; aux fromages à pate dure, demi-dure et molle; au fromage fondu, au fromage de lactosérum, aux caséines, aux caséinates, au lactosérum en poudre et aux concentrés de protéine de lait.La méthode peut s'appliquer aux teneurs en nitrates équivalentes à une concentration mesurée de la solution échantillon (après soustraction correspondant au blanc) supérieure à 0,2 mg/l.

This International Standard specifies the reference method for the determination of the fat content of raw,processed and sour cream in which no appreciable separation or breakdown of fat, due to lipolysis, hasoccurred.The method is not applicable to sour creams with starch or other thickening agents.NOTE If the method is not applicable and when separation or breakdown of fat occurs, a method utilizing the Weibull-Berntrop principle is suitable (see ISO 8262-311DF 124-3).

This International Standard specifies the reference method for the determination of the fat content of mostmilk-based edible ices and ice mixes.The method is also applicable to concentrated and dried ice mixes.The method is not applicable to some milk-based edible ices and ice mixes, in which the level of emulsifier,stabilizer or thickening agent or of egg yolk or of fruits, or of combinations of these constituents makes theRose-Gottlieb method unsuitable.NOTE With such products, a method utilizing the WeibulI-Bemtrop principle (see ISO 8262-211DF 124-2) issuitable.
